Ingredients: 1 4-oz piece of salmon (skin removed) 1 cup of white rice 1 cup of stir-fry veggies (fresh or frozen) 1 cup of Mandarin stir fry sauce 1 1/2 tablespoons of cooking oil Salt and pepper Flour Directions: 1. Cook rice through the "Simmer and Steam" method (See "Easy 30-minute White Rice" post). 2. Put oil in large skillet and turn to medium-high heat. Season both sides of salmon with desired salt and pepper, then lightly coat with flour. When skillet is hot, place salmon in skillet to get a sear, then flip and turn heat to medium. Cook for about five minutes on each side. 3. As salmon is almost cooked, add the veggies and mandarin sauce, getting it to a moderate boil. Turn down the heat to medium-low and cover skillet with lid. This will give time for veggies to steam and get tender. Continue to let cook until veggies are at desired tenderness and the sauce has thickened. 4. Place salmon on a plate, add rice on the side and top it with the veggies. 5. Enjoy!
